Inspired by [livejournal.com profile] ann1962's scalloped potatoes"--started to post as answer, but thought others might like it or have suggestions for improvements.

I took this to a potluck and everyone was excited, though I had thought it was really commonplace. So just in case there's anyone who doesn't know it:

Calabrese Salad (serves 4)

Ripe tomatoes (good tomatoes are essential; I prefer vine ripened, and homegrown if possible)--3 or 4, depending on size
Fresh mozzarella (also called bufalo; comes in a bag at many groceries; is kind of squishy--1/2 pound or so
Fresh basil--a few leaves
Salt and pepper (fresh ground) to taste

Slice the tomatoes (about 1/2 inch or less slices) and slice the cheese to about the same size--you can also make half-slices.

Interleave the slices (tomato, cheese, tomato, cheese, etc)on salad plates

Chop the basil or even better snip with scissors and sprinkle over the tomatoes, add salt and pepper

Serve and eat right away!

Left-overs on a pizza crust and heated until cheese melts will become Pizza Margherita (I like to put the basil on after cooking, in that case)

LOL, I have done this very thing. But my variation was to whiz olive oil and some of the basil together. It becomes a horrid shade of green, but a thin emulsion of sorts is produced. Excellent.

I usually pour a bit of olive oil over the whole thing but I haven't tried putting the basil in the oil.

I've also substituted Greek feta for the cheese, much stronger taste but still yummy.

Indeed on the recipe group, also. I've already ordered a cook book based on some of Rah's delicious food (want that cake *now* but don't think it's in the book).

I think if I slice the cheese thinner I can tell myself this is okay for my diet. That olive oil they mention above sounds tempting, too.

Instead of slicing it, just cut a smaller amount up and crumble onto the basil and tomato. You get the flavour without the calories. There is always a way to enjoy food.

Yum,yum,yum. Tomatoes and fresh basil are two of my very favourite things to eat. I must try the pizza suggestion. **wipes spot of drool off chin**

You can often find that pizza on the menu at Italian restaurants. It's very good if the crust is thin and crispy.
